  • 1 cup chickpeas, drained & rinsed
  • 1 cup sweet potato, diced
  • 1 cup broccoli florets
  • ½ cup red cabbage, shredded
  • ½ cup carrots, julienned or shredded
  • 1 tbsp olive oil
  • Salt & black pepper, to taste
🍋 For the Tahini Dressing
  • 3 tbsp. tahini
  • 1½ tbsp. lemon juice
  • 1 tbsp. maple syrup
  • 1 clove garlic, minced
  • 2–4 tbsp. warm water, to thin
  • Salt to taste
