Strawberry Banana Bread

Ingredients
  

  • ½ cup softened unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 3 ripe mashed banana
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups chopped strawberries,
  • 1 tablespoon all-purpose flour

Method
 

  1. Preheat oven to 375 degrees Fahrenheit. Spray two 9 x 5 loaf pans with non-stick cooking spray. Set aside.
  2. Add ½ cup softened unsalted butter and 1 cup granulated sugar to a large bowl. Using an electric hand mixer, cream together until light and fluffy.
  3. In a small bowl, beat 2 large eggs using a fork. Add the eggs to the sugar mixture and mix until combined.
  4. Add 3 ripe mashed bananas to the sugar mixture and mix until combined.
  5. Sift together 2 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Slowly add the sifted flour ingredients to the banana mixture and mix until flour is just combined. DO NOT OVER MIX!
  6. Toss 1 ½ cups chopped strawberries, with 1 tablespoon all-purpose flour. Fold the floured-covered strawberries into the batter.
  7. Divide and pour the batter into the prepared loaf pans.
  8. Bake in the preheated oven for 15 minutes. REDUCE the heat to 350 degrees Fahrenheit and bake for an additional 30 minutes. The bread is done when the edges are slightly brown or until a toothpick inserted into the center comes out clean. Let cool completely before removing from loaf pans.
