  • 2 tbsp avocado oil (or olive oil)

  • 2 eggs, beaten

  • ½ cup zucchini, chopped

  • ½ cup bell pepper, diced

  • ¼ cup green onions, sliced

  • 1 clove garlic, minced

  • ½ tsp ginger, grated

  • Salt & pepper to taste
